This is Sopa de Ajo (Spanish garlic soup) and it’s pure comfort in a bowl! It’s made with lots and lots of garlic, lots of olive oil, a good sprinkle of paprika, stale white bread and eggs. It could not be easier to make and is such a nostalgic meal for me to eat. My mum would always crack a few eggs into the pot to poach which was always my favourite part!
